![]() ![]() So we always need to adjust our menu based on the food available. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Continue processing for a full 1-2 minutes, or until the cashew cheese is smooth and thick, adding a tablespoon of extra water if needed. Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. With the motor running, drizzle in the water and let the cashews process for about 10 seconds. Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time!
